Sunday was the best this week. Every single one of my immediate family members were gathered together for Sunday dinner. When it comes to family I am a true sap at heart, I loved looking around the dining table and seeing each of them. There was Aimee and her sweet little family, Anthony with Jana and their two, and Craig. I couldn't of asked for anything else – and yes, I teared up for a fairly brief moment.
We gathered for a traditional pot roast and gravy Sunday meal. Well, almost traditional there was no mashed potatoes but there was gravy because the pot roast produced some amazing drippings. We had corn on the cob, salad, biscuits, and chocolate bundt cake for dessert. It was delicious, heartwarming, and lots and lots of food.
The roast leftovers have made several addition meals since, including grilled cheese roast beef sandwiches. Grilled cheese sandwiches are so easy to make, sometimes they are even my "I can't think of anything else for dinner" meal. And making grilled cheese roast beef sandwiches is almost as easy as the original. Especially if you have leftover pot roast.
I stepped up the grilled cheese a notch with homemade aioli but you can use store bought mayo and add the spices. This rosemary aioli was what I used but I was all out of celery leaves so I threw in spinach because sometimes you just need to improvise and hope for the best.
Anthony says grilled cheese roast beef sandwiches isn't really a recipe; after all it is two pieces of bread, cheese – I used provolone and colby jack, roast beef, bacon – oh did I mention the bacon, red onions, and aioli. Layer everything; butter the outer side of the bread and fry up. So easy, so good, and I guess you can call it the "not a recipe" grilled cheese roast beef sandwiches.

Roast Beef Grilled Cheese Sandwiches
Servings 2 sandwiches
Grilled cheese roast beef sandwiches; two cheeses, roast beef, bacon, aioli, red onions, and a hearty bread for an easy but soul filling dinner.

Cook Time 5 mins
Total Time 10 mins
- 4 slices bread (a hearty one to hold everything together)
- 2 slices provolone cheese
- 2 slices colby jack cheese
- 2 to 4 slice of roast beef
- 3 to 4 slices cooked bacon
- 3 to 4 circles red onion (optional)
- 2 to 4 TBS rosemary aioli
- 2 to 4 TBS butter

Butter the outside of each slice of bread

Spread aioli on the inside of each slice of bread

Layer 1 slice of provolone on top of one slice of bread

Add the roast beef, bacon, red onions (optional), top with colby jack cheese, and another slice of bread

Repeat for the second sandwich

Set the sandwiches in a heated frying pan, fry for 1 to 2 minutes until butter is browned

Carefully flip sandwich over and brown the other side, remove once cheese is melted.

Serve with more aioli if desired
